what? cumin spiced sweetcorn, red onions and grated beetroot, toasted cashew nuts/peanuts, cucumbers, pomegranates, a sprinkling of desiccated coconut and a tahini dressing
why? simple, organised, colourful and cucumber, nuts, coconut and sweetcorn is a dream combination
